I think mashed potatoes are delicious, no matter how they are cooked. My personal preference is for them to be cooked from scratch, rather than buy one of those off-the-shelf powders which tend to be loaded with unwanted and unhealthy ingredients that do more harm than good. If you heard the term ‘Ultra Processed Foods’, that is very real and certainly applies to a lot of packaged foods.
Potatoes as part of your meal?
No matter how much negative press potatoes get, they do have some good qualities. Provided of course, they’re cooked the right way and consumed occasionally. Most importantly, cook them from scratch. Even if you’re cooking fries (you will love our Air Fryer Sweet Potato Fries), wash fresh potatoes (leave the skin on), cut them into long, slim pieces and air fry them. They are way more healthy than cooking frozen, store-bought fries. Potatoes can be the carbs in your meal, in place of bread. They contain a lot of micronutrients and are low in calories.
Delicious Mashed Potato ‘Curry’
Curry is such a broadly used term that its meaning gets blurry. In the Indian cuisine there are wet and dry curries. Any vegetable or meat that is pan-cooked with some spices, either dry or with a gravy (water added as the consistency demands) is referred to as a curry. So go figure. My wife is allergic to certain spices. I modify some traditional recipes, so she can enjoy them without worrying about an upset stomach. She loves this dish, especially with the Indian crepe called dosa. The original recipe, South Indian Potato Curry is spicy and tempered with curry leaves and so on.
Though potatoes are a starchy carb, they are healthy when cooked right and consumed in a balanced diet. They are low-calorie and contain a host of micronutrients. Potatoes could be a good alternative to bread in your meal.

Delicious Mashed Potato 'Curry'
Equipment
Ingredients
- 2 Cups Potato - Small pieces
- 1/4 Cup Red Onion - Fine cut
- 1/2 Cup Tomato - Fine cut
- 1 Teaspoon Ginger - Fresh, grated
- 1/4 Teaspoon Turmeric Powder
- 1/4 Teaspoon Sea Salt - Or to taste
- 1 Tablespoon Olive Oil
- 1/4 Cup Filtered water
Instructions
Instant Pot (IP) All The Way:
- 1. Set IP on 'sauté' mode, add oil and wait for the 'hot' sign. Add onion, ginger and cook for a couple of minutes till the onions get slightly brown 2. Add turmeric powder and mix well 3. Add tomato, salt, and cook for 2-3 minutes 4. Add potato, water, mix well
- Set IP on pressure cook mode for 15 minutes. Allow for natural release, remove lid. Mash the potatoes with a spatula and transfer to a serving bowl.
IP + Pan:
- Add potatoes to IP. Set IP on pressure cook mode for 15 minutes. Allow for natural release, remove lid. Mash the potatoes with a spatula.
- 1. Heat pan on stove top (medium heat) and add oil. Once hot, add onion, ginger and sauté for a couple of minutes to brown onion. Add turmeric and mix 2. Add tomato, salt, and mix well. Set lid and cook for a few minutes to ensure they are well cooked. 3. Add mashed potatoes 4. Mix well and cook for a minute. Transfer to serving bowl.
- Enjoy hot with crispy dosa.
