The first time I tried mashed potatoes was on my maiden visit to the US in the year 2000. Growing up on Indian cuisine, I was not familiar with the concept of mashed potatoes. Of course, we would mash them, mix some spices, and turn them into cutlets, samosas or patties. So, when my client and I went out to dinner, he suggested a veggie burger and mashed potatoes for me. I was not really hooked on, but at the very least, started getting used to the idea.
Powdered Mashed Potatoes
My wife loves mashed potatoes. When we first met about 12 years ago, she used to buy packets of powdered mashed potatoes that could be cooked in a microwave. She only had to mix them in water, add butter and cook for 2 minutes. ‘Convenience is everything’, she said. It was then that I noticed the ingredients on the package that were a mouthful to pronounce: Monoglycerides, Sodium Acid Pyrophosphate, Sodium Bisulfite and Mixed Tocopherols. Go figure! Do you really need to consume all these chemicals for a simple dish like this? Or any dish for that matter? I decided right then that I would perfect this dish for her, making it completely organic, no chemicals.
Whole 30 Compliant Recipe
A few years ago, my wife switched to a Whole 30 diet, to put her gluten intolerance to rest. She went completely off grains. For those who are unfamiliar, Whole30 is somewhat like a paleo diet but with additional nuances. Basically, no grains, no dairy, no alcohol, no sugar, no legumes. Definitely not for me. I love all the above😊. Long story short, Whole30 mashed potatoes use ghee instead of butter, and that is accepted since it is lactose free. So, I’ve been cooking it to this specification for over 5 years now, and it is a big hit with my wife.
Easy Instant Pot Mashed Potatoes
Undoubtedly, this is one of my easiest recipes. I use organic gold potatoes for this recipe. The skin is not thick and has good nutrition. They cook so well in the Instant Pot (IP)! To get them really soft I pressure cook on high for 15 minutes. I used organic ghee, Himalayan pink salt, and organic powdered garlic. That’s it! It gets easily mashed with a spoon or a spatula. If you want it to look fancier, you can sprinkle some parsley on it.
Potatoes are a low-calorie diet, with a medium-sized baked potato containing only about 110 calories. They are a good source of vitamins C and B6, manganese, phosphorus, niacin and pantothenic acid.

Easy Instant Pot Mashed Potatoes
Ingredients
- 3 Cups Potato - Organic Gold (about 4 small sized potatoes)/Unpeeled
- 1 Tablespoon Ghee - Organic
- 1 Teaspoon Garlic - Powdered, organic
- 1/4 Teaspoon Himalayan Pink Salt - Or to taste
- 1/4 Cup Filtered water
Instructions
- Cut potatoes to small pieces, wash and drain.
- Transfer to Instant Pot (IP), add water, tighten lid and set on high pressure for 15 minutes.
- Allow for natural pressure release (NPR), transfer to bowl. Add ghee, salt, garlic powder.
- Using a spatula or a big serving spoon, mash well.
- Enjoy with your favorite burger, lettuce and tomato.
