Bhindi (Okra) Ki Bhujia is a delicious North Indian sautéed okra recipe.
What is Bhujia?

I associate the word bhujia with a savory, spicy, crunchy snack that has origins in Bikaner, a city in Rajasthan, India. This is because the snack is so popular across India, thanks to a brand called ‘Haldirams’. Out of curiosity I did some quick and dirty google search and found out that one of the main ingredients of this snack bhujia, is a lentil called ‘matki’ (moth bean). Have you ever heard of this lentil? Matki apparently grows in arid, desert conditions (which Rajasthan is) and used in a number of dal recipes. It is very protein rich, especially good for those who do not eat meat. Interesting stuff!

Not only does ‘bhujia’ refer to this famous snack, but also to sautéed vegetable dishes.  ‘Bhindi ki bhujia’ is one of those. I must thank my friend Medhavi, for introducing me to this delicious recipe. I like this recipe for its simplicity. It is an easy-to-cook sauté dish with a short ingredient list.

How Much Do You Cook Your Veggies?

In order to make sure I cooked the recipe right I sent Medhavi, pictures and notes of what I did. I got a thumbs up sign back for all the steps, except the final one. She said I did not cook all the way – ‘the color of bhindi’ she said, ‘should be much darker’. Well, that one’s on me. Over the last few years I seem to have conditioned myself to cooking veggies lesser. I seem to have acquired a taste for that bit of crunchiness. I also think it is healthier to not cook vegetables too much.

 

Why Is This Healthy?

Okra contains potassium, vitamin B, vitamin C, folic acid, and calcium. It’s low in calories and has high dietary fiber content. Recent studies suggest that okra also helps manage blood sugar in cases of type 1, type 2, and gestational diabetes.

Bhindi (Okra) Ki Bhujia

Ingredients

  • 3/4 Pound Okra
  • 1/2 Cup Onion - Fine cut
  • 3 Peppers Green Chili Pepper - Fine cut
  • 1 Tablespoon Cumin Seeds
  • 1 Teaspoon Coriander Powder
  • 1/2 Teaspoon Turmeric Powder
  • 1/4 Teaspoon Sea Salt - Or to taste
  • 1 Tablespoon Mustard Oil

Instructions

  • Make sure you have everything prepped and ready to go before you start cooking.
  • Heat oil in pan and add cumin seeds. Allow them to splutter.
  • Add okra and let cook it till the stickiness of okra goes away.
  • Now add onion, chili peppers, salt, coriander powder and turmeric and cook it till okra gets completely cooked.
  • Transfer to serving bowl. Serve hot.

Notes

Great with Wholesome Methi (Fenugreek) Paratha, Gluten Free Tortillas or Brown Jeera (Cumin) Rice.
