Vegetable Masala Omelet is my absolute go-to dish when I’m in the mood for an omelet at home. I love the fact that it is loaded with all kinds of veggies, and is deliciously spicy! Served with a side of guacamole, this makes for a prefect breakfast, loaded with protein, fiber, and good fat. This breakfast also helps me avoid carbs and grains at least for one meal in a day. A winner all round!

 

Omelet

Generally when I go to a buffet breakfast, I look for the omelet station. It is mostly crowded with folks ordering all kinds of omelets. I love watching the chefs artfully and efficiently produce custom omelets for everyone. I always make sure I order mine with peppers, onions and any other veggies they might have. Masala omelet of course is only available in India and a lot of Middle Eastern countries, but its not an option in Europe. On the rare occasions when I go to a diner, my favorite breakfast is omelet, potatoes and toast (I know, lots of carbs, but its delicious!),

 

Vegetable Masala Omelet

This recipe is an absolute winner on nutrition, taste and color. Of late, I’ve been trying to add more color on my plate in addition to vegetables, and I have plenty of color here. I have green with chili peppers, spinach and cilantro, orange with carrots, purple with cabbage (I used purple cabbage here) and yellow with tomatoes (small, yellow tomatoes). So each week at the grocery store I’m filling up my grocery bag with an assortment of colorful vegetables. It’s healthy….and fun!

Why is this Healthy?

Avocados offer critical, healthy fats in addition to much more: various antioxidants, multiple trace minerals and vitamins. Eggs are high in protein and contain good cholesterol, while vegetables add fiber and other nutrients.

Vegetable Masala Omelet

Vegetable Masala Omelet makes a great breakfast dish. It is a wholesome and delicious grain free recipe, high in protein and fiber. Masala powder and turmeric give this dish an 'Indian' twist.

Ingredients

  • 4 Whole Eggs - Pasture Raised
  • 1/4 Cup Onion - Fine Cut
  • 1/4 Cup Tomato - Fine Cut
  • 2 Chilis Green Chili Pepper - Small, Fine Cut (or to taste)
  • 1/4 Cup Carrots - Grated
  • 1/4 Cup Cabbage - Fine Cut
  • 1/4 Cup Spinach - Fine Cut
  • 1/4 Cup Cilantro - Fine Cut
  • 1/4 Teaspoon Sea Salt - or to taste
  • 1/2 Teaspoon Garam Masala
  • 1/4 Teaspoon Turmeric Powder
  • 1 Teaspoon Avocado Oil

Instructions

  • Beat eggs in a bowl to ensure the yolks and whites are well mixed.
  • Add cut/grated vegetables, garam masala, turmeric, salt in a bowl and mix well.
  • Now add the beaten eggs to this bowl and mix well.
  • Add oil to a pan, set on medium flame and pour the mix on to the pan. Cook for about 5 minutes with a lid on and then turn over. Cook for a couple of minutes and transfer to a serving plate.
  • Serve omelet with guacamole.

Notes

Great combination if you're trying to get a delicious, high protein, grain-free breakfast.
