I love bell peppers! It is such a versatile veggie – colorful, nutritious and tastes great, raw or cooked! It can be paired with so many different veggies: potato, eggplant, cabbage and even other ingredients like quinoa, eggs. Also, it brings in a unique flavor to the dish and of course, a whole lot of nutrients. So, what’s not to love about bell peppers?

 

Green Bell Pepper

Even though bell peppers come in several gorgeous colors, I always end up with the green one. Called ‘Shimla Mirchi’ in Hindi, and referred to as ‘capsicum’, I have been familiar only with the green pepper, growing up in India. I was amazed with all the different colored peppers when I moved to the US, but I’ve been reluctant to use other colors, for some reason. Just can’t get around to trying!

 

Sautéed Veggies

Undoubtedly salads are great, but I don’t enjoy them as a meal. I’d rather have a salad as a side and not a main dish. This is another legacy I carry from growing up in India. Salad as a meal doesn’t seem to cut it. I need those cooked veggies, lentils and grains in order to be able to classify it as a meal! So, my favorite way to consume veggies is to sauté them. I cook them just right, so I don’t burn away the nutrients.

 

This Recipe

This is an amazingly simple recipe that is so delicious! Bell pepper, onions and eggplant complement each other so well in this sautéed dish. I use South Indian Curry Powder occasionally when I cook this recipe, but it is optional. Just salt and cayenne pepper are enough – the veggies themselves add a lot of flavor! So, are you ready to try this yummy recipe?

Eggplant is a high-fiber, low-calorie food that is rich in nutrients that helps protect your body’s cells from damage. Natural plant chemicals called polyphenols in eggplants help people with diabetes to process sugar better. Besides delivering a low-calorie and satisfying crunchiness, bell peppers are a great source of vitamins A, C, potassium and antioxidants.

Delish Bell Pepper & Eggplant Sauté

This simple, low calorie, bell pepper and eggplant recipe is delicious! Top it on your pizza or flatbread, enjoy it with your taco or rice.

Ingredients

  • 2 Cups Green Bell Pepper
  • 2 Cups Eggplant
  • 1/2 Cup Onion
  • 1 Teaspoon Mustard Seeds
  • 1/2 Teaspoon Red Chili or Cayenne Powder
  • 1/2 Teaspoon Sea Salt
  • 1 Tablespoon Coconut Oil - Cold pressed

Instructions

  • Cut bell pepper, eggplant and onion.
  • Heat oil in a pan, add mustard seeds. Add chopped vegetables, salt and mix well.
  • Set lid, cook for a couple of minutes on medium flame, stir and put the lid back on. Repeat this a few times till the veggies are cooked.
  • Add chili powder (or cayenne pepper), mix well.
  • Transfer to a serving dish and serve hot.

Notes

Top it on your pizza or enjoy it with steamed rice, taco or roti.
