Vegetable Masala Omelet is my absolute go-to dish when I’m in the mood for an omelet at home. I love the fact that it is loaded with all kinds of veggies, and is deliciously spicy! Served with a side of guacamole, this makes for a prefect breakfast, loaded with protein, fiber, and good fat. This breakfast also helps me avoid carbs and grains at least for one meal in a day. A winner all round!
Omelet
Generally when I go to a buffet breakfast, I look for the omelet station. It is mostly crowded with folks ordering all kinds of omelets. I love watching the chefs artfully and efficiently produce custom omelets for everyone. I always make sure I order mine with peppers, onions and any other veggies they might have. Masala omelet of course is only available in India and a lot of Middle Eastern countries, but its not an option in Europe. On the rare occasions when I go to a diner, my favorite breakfast is omelet, potatoes and toast (I know, lots of carbs, but its delicious!),
Vegetable Masala Omelet
This recipe is an absolute winner on nutrition, taste and color. Of late, I’ve been trying to add more color on my plate in addition to vegetables, and I have plenty of color here. I have green with chili peppers, spinach and cilantro, orange with carrots, purple with cabbage (I used purple cabbage here) and yellow with tomatoes (small, yellow tomatoes). So each week at the grocery store I’m filling up my grocery bag with an assortment of colorful vegetables. It’s healthy….and fun!
Avocados offer critical, healthy fats in addition to much more: various antioxidants, multiple trace minerals and vitamins. Eggs are high in protein and contain good cholesterol, while vegetables add fiber and other nutrients.

Tried looking for an ‘Indian’ substitute for guacamole.. will green peas work? I looked up your recipe for guacamole..but we dont get few ingredients here..
I don’t think peas would be an equal substitute for Avocados. I have seen avocados in some grocery stores in Bombay and Bangalore. I think they are called Butter Fruit. Keep an eye open for them in Hyderabad. Or, visit us and we shall make you some! 😀
A tablespoon of milk while whisking all the ingredients can make the omelet fluffier!
Switch a few ingredients to make it a mexican omelet..onion to spring onion, a little bit of taco seasoning, a few olives and ofcourse you have your guac!
Nice! Will try it out. Thanks Anu.
Hello. What can we substitute avocado and avocado oil with in this recipe?
Shridhar, there is really no substitute for avocados. Butter Fruit, as they are called in Asia (Alligator Pear in SE Asia), are available in many grocery stores in Bangalore. You can substitute avocado oil for any other oil of your choice. Or just skip the guac and eat the veggie masala omelet with any of the many sauce or chutney recipes from our blog. Thanks for visiting!
