This deliciously spicy baked eggplant is so easy to cook! Enjoy it as an appetizer or snack, add it to your roll or sandwich with some fresh lettuce, or add it to your salad for that extra flavor. You'll love it!

Wash and slice eggplant into wedges. Lay pieces on a foil in a baking tray.
Spray avocado oil evenly across all pieces. Sprinkle salt, cayenne pepper, turmeric, garlic and onion powder. Spray oil again.
Cover tray with foil. Preheat the oven to 375 F. Set the baking tray in the oven and allow the contents to bake for 15 minutes.
Remove foil and bake for 5 more minutes. Broil on 'high' for 5 minutes. Keep checking to ensure there is no burning.
Transfer to a plate or bowl and serve hot.
