Ginger & Garlic Paste is one of the most common ingredients in Indian dishes, along with Garam Masala. Though sold in stores ( most off the shelf versions use chemicals and preservatives) it’s always better to blend fresh every week and refrigerate in an air tight container. Health benefits of fresh ginger and garlic will together apply for this preparation.
To make this paste, peel and chop 4 oz. fresh garlic and 4 oz. fresh ginger root. In a food processor, combine the garlic and ginger. Pulse to blend, adding small amounts of olive oil (or any oil of your choice) to facilitate the blending, until it makes a smooth paste. Refrigerate or freeze.
